RECIPE: London Fog

All this week, the weather in South-western Ontario has definitely taken a turn for the worse... cold, Cold, COLD! As a result, I took this as an opportunity to make one of my favourite winter (non-alcoholic) drinks--London Fog. I've been posting this on Facebook and have been getting questions asking what the heck a London Fog is. Well, here you go.



LONDON FOG

Strong Earl Grey Tea (loose leaf)
1 Vanilla Beans (Substitute: vanilla extract, or syrup)
Agave Nectar (Substitute: maple syrup, honey)
Milk (Substitute: almond milk, soy milk, hemp milk)
Ground Cinnamon (to garnish)

(1) Brew a strong batch of Earl Grey tea in your favourite mug. I use tea filters but you can easily use any diffuser or strainer to brew the tea. You want a strong brew BUT this does not mean just letting the tea leaves sit in the hot water for a longer period of time. If you do this, tea will release its tannins giving you a VERY bitter brew. Instead, just increase the amount of leaves.

(2) Add your vanilla. If you are using real vanilla beans, slice the bean in half and scrape out the insides with a knife and stir it into your earl grey tea. If you are using syrup or extract, put enough to suit your personal palate (don't over do it though).

(3) Steam up some milk. If you don't have an espresso machine at home,  just heat up the milk in the microwave. They also sell those hand held frothers you could try using as well.

(4) Add the hot, frothed milk to your brewed earl grey tea.

(5) Garnish your mug with a dash of cinnamon.

(6) ENJOY!
